Director of Restaurant and Bars

The Drayton Hotel is inspired by Savannah’s Historic District neighborhood, people and culture. We treat our team like family, and create a place where guests can experience Savannah's Historic District traditions and entertainment. The hotel features 50 rooms and suites, a destination restaurant, St. Neo's Brasserie, Rooftop Bar overlooking the Savannah River, Downstairs Cocktail Lounge, and Coffee Bar.

The Role

The Director of Bars and Restaurant is responsible for leading business performance for all dining and beverage experiences at The Drayton Hotel and St. Neo’s Brasserie, a destination restaurant. As Director, you define service standards, implement and uphold operations standards, and drive profits.

Responsibilities

Organizational and Budget: Develops operational & financial goals. Implements plans to achieve daily, weekly, monthly, and quarterly goals. Achieve budgeted revenues and expenses and maximizes profitability related to the food and beverage department. Develops short term and long term financial and operational plans for the food and beverage department which supports the overall objectives of the hotel. Maintain procedures for credit control and handling of financial transactions.

Communication: Champions the story of St. Neo’s Brasserie and The Drayton Hotel with guests, partners, team members, and community. Support team members to achieve goals.

Sales and Promotions: Implements and maintain local and regional Sales and Marketing programs. Collaborates with ownership to capitalize on sales opportunities, guest and team experiences, marketing and public relations.

People: Supports, mentors, and guides team members to grow professionally and achieve organization’s goals.

Compliance: Ensures that local, state, and federal regulations on sanitation standards are in compliance as well as the cleanliness and organization of the restaurant, lounge, rooftop and other R&B areas. Responsible for maintaining all operational standards to ensure hotel’s compliance with state & local alcoholic beverage requirements.

About you...

Minimum of 5-10 years managing high-volume, service-driven restaurant and bar operations in a hotel or multi-unit environment.

Extensive Food and Beverage Management and Sales experience preferred.

Obsess about details and processes.

Passionate about food and beverage.

You have a warm, engaging personality.

Hands-on attitude with an attention to detail.

Communicates well with guests, external partners, and peers.

Demonstrable results in inspiring and leading a team to accomplish hotel goals.

Have strong negotiating, problem solving and analytical skills.

Excellent time management and organization.
